Cinq années de vieillissement en cave transforment le Nippon Bare poli à 70% en ce koshu de Darumamasamune, avec une couleur ambrée plus profonde et un umami plus riche et concentré que la version de trois ans. La brasserie de Gifu utilise l'eau douce de la rivière Mugi et produit tout son koshu sans filtration au charbon.
