La technique kasui hiire consiste à pasteuriser le sake par immersion dans l'eau chaude, ce qui préserve davantage les composés aromatiques délicats par rapport au traitement thermique standard. Le résultat est un junmai daiginjo au profil raffiné et stable, qui conserve les qualités fraîches du riz Oyamanishiki.
