Élaboré chez KK Ookurahonke à Nara selon la méthode traditionnelle yamahai, ce Tokubetsu Junmai utilise du riz Omachi et fait l'objet d'une unique pasteurisation appelée kasui hiire. Le levain yamahai se développe naturellement sur plusieurs semaines, donnant un sake à l'umami profond, à la complexité terreuse et à une épine dorsale acidulée ferme, caractéristique de la richesse inhérente au riz Omachi.
