Description

Le bodaimoto est l'une des méthodes de démarrage de fermentation les plus anciennes documentées au Japon, née au temple Shoryakuji de Nara pendant l'époque Muromachi. Elle utilise de l'eau naturellement acidifiée pour contrôler la fermentation. Le Morohaku Bodaimoto Junmai de Nishida Shuzo s'appuie sur cette technique historique vivante, qui précède la plupart des pratiques modernes de brassage.
