Description

Le bodaimoto est l'une des méthodes de démarrage de fermentation les plus anciennes du Japon, développée par les moines du temple Shoryakuji à Nara à l'époque Muromachi et étroitement liée au patrimoine brassicole de la région de Nara. Ce junmai de Nishida Shuzo fait revivre cette tradition, qui est à l'origine de nombreuses techniques modernes de brassage du sake.
