Ginjo brassé dans le Hyogo à partir de riz Gohyakumangoku, commercialisé chaque automne en hiyaoroshi après une unique pasteurisation et une maturation estivale en cuve. Ce processus de vieillissement avec chauffage unique arrondit la texture du sake, produisant le caractère doux et moelleux qui définit le style hiyaoroshi.
