Le Yamada Nishiki poli à 40% et brassé sans alcool ajouté confère à ce junmai daiginjo de Tsuchiya Shuzoten à Saku, Nagano, un caractère pur axé sur le riz. La brasserie met l'accent sur le terroir local, utilisant du riz du Nagano cultivé sous contrat avec de l'eau souterraine du bassin de la rivière Chikuma.
