Ce Junmai Ginjo millésimé d'Azakura Shuzo utilise du Misato Nishiki poli à 50 %, mis en bouteille en tant que muroka genshu et exprimant désormais le caractère vieilli développé au fil des années d'une conservation soigneuse. La prédilection d'Azakura pour le riz cultivé en Akita et la levure Yukiguni UT-2 crée une architecture de sake qui évolue harmonieusement avec le temps.
