Le Junmai Ginjo d'Azakura Shuzo utilise le Misato Nishiki, un riz à sake développé en Akita, poli à 50 %, mis en bouteille sans filtration ni dilution en tant que muroka genshu pour préserver le caractère à pleine puissance et la complexité naturelle. En combinant la levure Yukiguni UT-2 d'Akita avec un riz développé localement, la brasserie crée un sake à l'arôme discret, à l'acidité propre et à l'excellent équilibre.
