Le Junmai Daiginjo d'Azakura Shuzo utilise le Misato Nishiki, un riz à sake développé dans la préfecture d'Akita, poli à 38 % pour atteindre un arôme exceptionnellement délicat et une texture soyeuse. Fondée en 1876 à Akita, la brasserie est spécialisée dans les styles muroka genshu (non filtrés, non dilués) qui livrent tout l'impact du caractère naturel du riz sans dilution.
