El arroz para sake Dewasansan, una variedad originaria de Yamagata derivada del Miyamanishiki, se pule al 50 % para este junmai ginjo hi-ire (pasteurizado) de Sugiisami Warabioka Shuzo en Yuza. La pasteurización única estabiliza el sake manteniendo el carácter afrutado y ligeramente seco típico del Dewasansan. El agua subterránea del monte Chokai, clasificada como semi-blanda, contribuye a la textura limpia y natural en boca.
