Soukuu Tokubetsu Junmai Tankan Wataribune de Fujioka Shuzo en Fushimi, Kyoto, utiliza Tankan Wataribune, una antigua variedad de arroz de Osaka revitalizada en la década de 1990 que es un ancestro genético del Yamada Nishiki, para una expresión de arroz puro con profundas raíces históricas. En esta destilería exclusivamente junmai donde el propietario-toji de quinta generación Masaaki Fujioka elabora cada expresión con el famoso agua suave de Fushimi, este arroz ancestral aporta profundidad estratificada y un carácter arraigado y gastronómico.
