Soukuu Tokubetsu Junmai Omachi de Fujioka Shuzo en Fushimi, Kyoto, utiliza Omachi, una de las variedades de arroz sake más antiguas de Japón, venerada por producir sakes complejos, terrosos y con gran profundidad umami, en el estilo gastronómico de arroz puro característico de la destilería. En esta destilería exclusivamente junmai relanzada en 2002 bajo la dirección del propietario-toji de quinta generación Masaaki Fujioka, la distintiva profundidad sabrosa del Omachi es moldeada por el famoso agua suave y dulce de Fushimi.
