Un sake local celebrado en festivales y banquetes. Originario de Okayama, la variedad original de arroz para sake 'arroz Omachi', cultivado en Okayama desde la era Edo, entrega aquí su sabor de origen. La rica umami del arroz para sake original se equilibra con una nitidez que realza el sabor del sake. Alrededor del 50 % del arroz apto para la elaboración se conserva hoy en día, un arroz sin cruce racial mantenido en Japón, originario de Bizen Okayama.
