Ginjo elaborado a partir de arroz Koshi Tanrei pulido al 50 %, prensado con el método tradicional fune de marco de madera en Yoyogiku Jozo en Joetsu, Niigata. El agua de manantial ultrablanda Chibitagawa, procedente de las estribaciones del monte Yoneyama, contribuye a un carácter limpio y rico en umami, distinto del estilo ligero y seco típico de Niigata.
