Verwendet Hefe der Vereinigung Nr. 7. Eine weißliche, milchige Spirituose mit schwebenden Reispartikeln wie ein Nigori. Der Sake entwickelt bis zum Herbst langsam einen kräftigen Körper. Verwendet wird Tankan Wataribune aus der Präfektur Hyogo, die Vatersorte des Yamada Nishiki.
