Description
Hiki Shuzo, founded in 1832 in Uchino, Niigata City, operates out of a main building registered as a prefectural cultural property and brews under the conviction that local sake belongs to the people of that place. Distribution is limited to a handful of shops within walking distance of the brewery, and Tsurunotomo is virtually unavailable outside the region, giving it the reputation of a phantom sake among those who seek it. Johaku, Upper White, is the most accessible expression: light, dry, and true to Niigata's tanrei tradition, yet with a surprising fullness and a clean, lingering umami depth that rewards repeated sipping alongside everyday Japanese home cooking.
