This nama (unpasteurized) junmai daiginjo takes its name from the pressing technique: seme refers to the final fraction extracted during pressing, here made exceptional through 40% polishing of Yamada Nishiki. The result is a fleshy, full-bodied freshness with depth of rice umami and clean, lively finish.
