Sakaya Hachibei Junmai Daiginjo Isenishiki uses Ise Nishiki, a heritage rice native to Mie Prefecture, in a premium daiginjo expression from Motosaka Shuzo in Odai Town. Ise Nishiki's large, starchy grains and the Kitayama River's pure water combine to produce a daiginjo with distinctly local character and structural depth rooted in Mie's ancient agricultural heritage.
