Miyanomatsu Junmai Ginjoshu is a pure rice ginjo sake from Matsuoshuzojo in Saga Prefecture, fermented with rice polished to 60% or below and produced without the addition of distilled alcohol. Saga Prefecture's mild climate and clean soft water from the Kyushu highlands provide ideal conditions for the delicate, fruity fermentation that defines the ginjo category. This expression balances the floral, ester-driven aromas of ginjo brewing with the substantive rice flavor that the junmai designation guarantees.
