Yamada Nishiki polished to 35% is aged for over ten years at sub-zero temperature storage in this rare koshu daiginjo from a brewery founded in 1844 in Iga, Mie Prefecture. Lengthy cold aging rounds the sake into a mellow, amber-tinted matured expression.
