Yamada Nishiki is used for this daiginjo from Kamenoishuzo in Kusu, Oita, produced with the same level of care as the brewery's competition submissions. Bearing the name Genkame, it is crafted by hand in small batches using Kumamoto yeast and soft Kuju mountain spring water, producing an elegant, food-friendly character.
