Eiko Fuji's Hinowa Junmai Daiginjo Murokanamagenshu uses Tsuya Hime rice polished to 50% and is bottled unfiltered, unpasteurized, and undiluted at Fuji Shuzo (founded 1778) in Tsuruoka, Yamagata, where the 13th generation Kato family continues a brewing tradition of over two centuries.
