2000年,旭酒造在清酒行业率先将离心分离机引入商业生产,这在日本尚属首次。对于追求更好佳酿的獭祭而言,离心分离机在技术挑战层面发挥了重要作用。以离心分离压榨的酒具有"毫无杂味的酒质",兼备精致的华丽感与细腻感。然而,将二割三分的醪醅通过离心分离机处理时,单独使用会因过于透明清澈而显得过于纯净,因此过去会将用薮田机压榨的酒进行调配以增加酒质的层次感。但近年来,随着酿酒匠人酿造技术的提升,通过精密控制发酵管理,已能够在保持透明感的同时兼具更丰富的口感层次。作为体现这一技术进化的标志性獭祭,"獭祭 纯米大吟酿 磨き二割三分 离心分离"今后将迈出仅由离心分离压榨的"磨き二割三分"单独构成的新步伐。
