Sasanoshizuku, meaning drops from bamboo leaves, is a daiginjo from Houmeishuzou in Tanba-Sasayama, Hyogo, bottled as namagenshu, meaning unpasteurized and undiluted. Tanba-Sasayama is a historic brewing area within Hyogo Prefecture known for its cool mountain climate and clean water, conditions that favor the development of delicate daiginjo aromas. Bottled raw and at full natural strength, this sake preserves the vivid, high-toned fragrance and intense flavor that highly polished daiginjo fermentation can achieve.
