Bottled without filtration or pasteurization as a muroka namagenshu, this junmai ginjo from Saijo carries an alcohol content of approximately 18%, preserving the full character of the pressing. The brewery's commitment to pure rice brewing and rice umami is reflected in the rounded, concentrated structure of the unprocessed release.
