From Saijo in Osaka's Kawachinagano district, this daiginjo draws on the Amano Sake tradition revived in 1971, tracing a lineage to the monastic sake beloved by Toyotomi Hideyoshi in the Sengoku era. The brewery self-polishes its rice to high degrees and is noted for emphasizing richness and umami over a dry, austere style.
