Kurodabushi

Oosato Shuzo, founded during the Tenpo era (1830s) in Kama City, Fukuoka, named the Kurodabushi brand after a popular folk song celebrating the warrior Mori Tahei, a retainer of the Kuroda clan, with lyrics that praise drinking sake with full commitment as the mark of a true Kuroda samurai. The brewery insists on hand-crafted production methods despite the availability of mechanization, responding to rice moisture and temperature changes by hand at each stage. The Kurodabushi daiginjo, made with Fukuoka-grown Yamada Nishiki and water from the Onga River headwaters, won gold at the Fukuoka Prefectural Sake Appraisal.
