Kamon is brewed in Saijo, the sake capital of Hiroshima Prefecture, a region celebrated for its soft water and the invention of the ginjo brewing method in the late 19th century. Saijo's soft water, drawn from granite-rich soil, produces sake with a light, smooth character that has made the district one of Japan's three premier sake regions.
