Uroko

Shimazaki Shuzo, founded in 1849 in Nasu-Karasuyama, Tochigi Prefecture, ages its Uroko sake inside a decommissioned wartime tunnel that extends over 600 meters into the hillside — a cave originally excavated as a tank factory during World War II. The brewery stores approximately 100,000 bottles in the constant low temperature of this cave, allowing long-term maturation that produces Uroko's signature amber hue, aromas of black sugar and caramel, and a bittersweet umami-rich finish. Brewing water is sourced from underground springs fed by the Naka River, which originates from Mount Nasu.
