Hayakawa Shuzou, established in 1915 in Komono-cho at the base of the Suzuka Mountains in Mie Prefecture, runs as a tiny three-person operation led by brewer Hayakawa Toshito, who developed the Tabika label after becoming captivated by Omachi rice during work at another brewery. Using ultra-soft subsoil water from Mount Shakadake and a rotating selection of sake-specific rice varieties including Omachi and Shinnohoshi, the brewery pursues a gentle, smooth, and fatigue-free style across its small-batch lineup.
