Shinanotsuru
Shinanotsuru is brewed by Chouseisha, a small sake house established in 1922 in Komagane City, Nagano Prefecture, nestled in the Ina Valley at the foot of the Central Alps. In 2001, under the fourth-generation brewmaster, the brewery shifted entirely to junmai sake production, sourcing 100% locally grown Miyamanishiki rice and drawing brewing water from a spring 40 meters underground. The result is an aromatic, mellow sake with a clean finish that reflects the mountain terroir of Shinshu.
