Onda Shuzo, founded in 1875 at the foot of the Echigo mountain range in Nagaoka, Niigata, practices a rare chateau-style production in which the brewery cultivates, harvests, and mills its own sake rice before fermentation. Operating under the philosophy 'Trust in rice, brew SAKE,' the team draws on self-grown rice and local groundwater to express the full umami of the land. The Maitsuru lineup includes the Tsudzumi series, known for its rich character and regional identity rooted in the terroir of the Niigata mountains.
