Kizan
Kizan is a brand from Chikumanishiki Shuzo, founded in 1681 in Saku City, Nagano Prefecture, one of the oldest sake breweries in the region. The brewery produces Kizan as a full-bodied, richly flavored line that was developed deliberately as a counterpoint to the tanrei karakuchi (light and dry) trends that swept the Japanese sake market, emphasizing dense rice umami instead. Chikumanishiki Shuzo uses Miyamanishiki rice grown in Nagano and carries out its own rice milling in-house at its three-story brewing facility.
