Kimoto

Akita Meijyo, established in 1922 in Yuzawa, Akita Prefecture, was created through a collaboration of major Akita sake brewers and local business leaders to bring the region's sake to markets in Tokyo and beyond, with its brand name Ranman chosen by public competition at the time of founding. The brewery operates two distinct production spaces, the traditional hand-crafted Ogachi Gura and the modern Ontake Gura, both guided by the principle of sake quality above all else and the brewery's proprietary Akita-style low-temperature long-fermentation method. The Kimoto label within the Ranman range uses naturally cultivated lactic acid bacteria and a slow, cold fermentation process to produce sake with the layered umami and roundness characteristic of kimoto-style brewing.
