Founded in 1624 in Kururi, Chiba Prefecture, Yoshizaki Shuzo is the oldest sake brewery in Chiba, drawing its water from three deep wells that produce the soft, gentle mineral character of the region. Kichiju, the brewery's flagship brand, is brewed with locally grown rice varieties including Fusa no Mai and selected sake rice, using traditional hand methods that have been in use since the Meiji era. The lineup spans from junmai ginjo and honjozo genshu to sparkling sake, with the brewmaster committed to evolving with drinker preferences while honoring the craft.
