Eigashima Shuzo, founded in 1679 in Akashi, Hyogo, is one of the longest-established comprehensive sake producers in the Nishi-Nada region, and its Kamitaka brand name was registered in 1894, reportedly inspired by an eagle that alighted on a Japanese naval flagship. The brewery produces Kamitaka with a deliberate emphasis on full-bodied, richly flavored sake, deliberately choosing to craft an umami-driven style with balanced acidity and sweetness at a time when lighter, drier styles dominate the market.
