Brewed in the traditional mizumoto style, known for producing high acid, full character sake, this junmai is made with Hitomebare rice polished to 70%. Expect a rich, deep rice flavor balanced by pronounced acidity, at 15% alcohol by volume. It pairs particularly well with rich dishes such as grilled meats and the local Akashi speciality of octopus.
