Founded in 1875 on the banks of the Chikugo River in Fukuoka by a swordmaster, Ikekame Shuzo built its identity around a technique almost unheard of in sake: brewing with black koji, a mold more commonly used in shochu production. The result is a bold, citric-rich style anchored by their flagship Kuro Kabuto line, which takes its name from the black helmet worn by that founding swordmaster and from the dark koji itself. While preserving good traditions, the brewery continually challenges new approaches to give drinkers fresh surprises.
