Rice from Fukuoka polished to 50% is released as a hiyaoroshi autumnal sake from Ikekame Shuzo in Fukuoka under the Ginjoshu label. Pasteurized once in spring and matured through summer, it arrives in autumn with rounded, mellow depth.
