Ichinotani

Uno Shuzojo in Fukui Prefecture traces its lineage to 1620, making it one of Japan's older continuously operating sake producers, and the brand Ichinotani was named after a celebrated haiku-era wordplay connecting the brewery's former house name Mugiya to the historic battlefield of Ichinotani. The brewery uses the renowned pure spring water called Oshimizu, a nationally designated famous water source, and has long specialized in premium brewing with an all-ginjo production standard. Its flagship daiginjo has won top awards at national sake competitions multiple years consecutively.
