Haginshiki
Haginishiki Shuzo, founded in 1876 in Shizuoka City, is a small family-run brewery situated near the sea and supplied by soft subterranean water from the Abe River, a source recognized as one of Japan's Heisei-era famous waters. Operating at a scale that allows fine-grained control at every stage of production, the brewery pursues what is described as a Shizuoka-style ginjo — restrained in aroma, harmonious with cuisine, and expressive of the softness in both its water and its rice.
