Founded in 1890 in Niigata Prefecture, Echigo Tsurukame takes its name from the crane and tortoise, both traditional Japanese symbols of longevity, reflecting the brewery's aspirations for auspicious and enduring quality. The brewery insists on small-batch brewing with meticulous attention to rice selection, washing conditions, and water absorption at every stage to draw out the full character of each ingredient. Echigo Tsurukame has also developed sake fermented with wine yeast, a three-year research effort that resulted in a distinctively different expression within the lineup.
