Tomb and archeological sites are dotted around our company, Echigo Tsurugame. A long time ago, a commander called the "King of the Koshi" ruled this area, and called the nearby mountainous area "Koshiwa". In connection with its name, it was named "Kingo" to the highest liquor of our brewery. Junmai Daiginjo uses 100 % of Yamada Nishiki, a special US -based rice from Hyogo Prefecture, the highest peak of rice suitable for sake brewing. It is the ultimate liquor that polished and examined Yamada Nishiki to 35 %. Elegant ginjo scent and delicate and mellow taste.

We are looking for the highest sake quality that will satisfy our customers, and dare to focus on small preparation. From the selection of rice, the appropriate rice washing conditions and the optimal water absorption conditions are set each time, and the characteristics of raw materials are drawn out by making full use of skilled techniques.
