O Yamada Nishiki é o núcleo deste ginjo do rótulo Tenkei da Hayakawa Shuzobu de Kawagoe, fermentado com água de nascente das montanhas Suzuka e produzido com a técnica característica da destilaria de construir um koji robusto para extrair o máximo sabor do arroz. O ginjo oferece aroma fresco e uma textura na boca plena e em camadas, característica do estilo rico em umami da casa.
