O arroz Kyo no Kagayaki polido a 60% e engarrafado como genshu a 17-18% de álcool confere a este tokubetsu junmai seu caráter ousado e extra seco, com valor SMV de +16, colocando-o firmemente na categoria cho-karakuchi (super seco). Vencedor da medalha de ouro no Milano Sake Challenge 2019 e em competições posteriores em Singapura e Tóquio, é elaborado com fermentação completa para intensificar a secura, preservando ao mesmo tempo a riqueza do sake não diluído. A água da nascente Shiragiku de Fushimi sustenta tanto o final firme e cortante quanto a profundidade subjacente de sabor.
