O Nihonshujikomi Umeshu da KK Tsukinoishuzouten, em Ibaraki, usa sake como base de maceração para as ameixas ume inteiras, diferenciando-se dos umeshu mais comuns à base de shochu. A base de sake contribui com uma doçura mais suave e arredondada, além de seu próprio caráter de fermentação, resultando em um licor de ameixa com profundidade matizada e uma borda alcoólica mais gentil.
