A KK Tsukinoishuzouten, em Ibaraki, utiliza nihonshu como base para este licor de ume orgânico, macerando ameixas orgânicas em sake em vez de shochu ou destilados neutros. A base de sake se integra à acidez e à fragrância da ume, criando um licor naturalmente adocicado e com camadas de sabor, de caráter mais suave e complexo do que os licores de ume convencionais.
