Nama-chozo (cold-stored unheated) sake from a small brewery established in 1916 in Kuma Kogen, a mountainous area of Ehime Prefecture. The cold-storage process preserves the fresh character of the newly brewed sake through to bottling, producing a clean, lightly sweet profile suited to everyday enjoyment.
