Gohyakumangoku polished to 60% is pressed into a nigorizake at this 1835-founded Fukui brewery, retaining fine rice sediment in suspension for a cloudy, textured pour. Imajo's severe winter climate allows naturally cold fermentation conditions suited to producing clean, food-friendly unfiltered sake.
